strawberry and white chocolate muffins

what do i do when i get restless after a few pages of dense sociological theory readings? i bake.

a half-used punnet of strawberries, two more white chocolate squares nicely wrapped in foil… after a little bit of pondering i decided to make strawberry and white chocolate muffins.

adapted from donna hay’s modern classics 2: (makes 12)

2 cups self-raising flour
3/4 cup caster sugar
200 ml sour cream (or plain yoghurt)
2 eggs
1/3 cup vegetable oil
1 1/4 cup strawberries, diced
100g white chocolate, cut into small pieces

1. preheat the oven to 180 degrees celsius. sift the flour into a bowl. add the sugar and stir until combined.

2. place the sour cream, eggs and oil in a bowl and whisk until smooth. stir the sour cream mixture through the flour and sugar mixture until just combined.

3. sprinkle over the strawberries and white chocolate and stir once. spoon the mixture into muffin/cupcake liners until two-thirds full. bake for 15-20 minutes or until cooked when tested with a skewer.

these were very good. although you can’t really taste the white chocolate, it complements the tartness of the strawberries. for the muffins to rise well, stir the mixture evenly and only until just combined. overhandling/overworking the mixture will result in tough muffins.

this recipe is very versatile. you can omit the chocolate, change the type of fruit used, add nuts, almost whatever you fancy. this is a very simple recipe, something you can easily whip up in less than an hour. (plus baking time!) one more (stud)muffin with a glass of milk before i go to bed!

  6. These look so beautiful! I don’t bake very often but I was compelled to try this out yesterday. I love how they have just the right amount of sweetness. Mine turned out a little gummy and looked hideous but it’s good enough for a novice like me 🙂

  13. This recipe has a good taste of strawbery but not so much white choclate if i made them again i would add more chocolate.They are sutible for a childrens party or a afternoon tea party
