after eight cupcakes
September 18, 2007 at 11:05 pm | Posted in Birthdays, Chocolate, Cupcakes | 29 Commentsi know it has been SO LONG since i last posted, but i have been really caught up with work. it’s as if i’ve been sucked up into a vortex, seriously. i have been baking occasionally but i just didn’t have enough time/energy to write a proper entry.
yesterday the jc girls had a break-fast-cum-belated-birthday-celebration for shidah. when i asked her what type of cake she wanted, she gladly left it up to me – i decided on a combination of chocolate and mint because i remember she loves cadbury peppermint chocolates.
adapted from cupcakes galore; gail wagman
cupcakes:
200g plain flour
50g cocoa powder
2 tsp baking powder
1/2 tsp salt
90g butter, softened
100g sugar
2 eggs
160ml milkmint buttercream:
185g butter, room temperature
300g icing sugar
few drops of mint extract/essence
green food colouring1. preheat the oven to 160 degrees celsius. mix flour, cocoa, baking powder and salt together and set aside.
2. cream butter and sugar until light and fluffy. add eggs, one at a time, mixing after each addition. alternately beat in flour mixture and milk.
3. spoon batter into cupcake cases. bake for 20-25 minutes or until a tester inserted into the centre comes out cleann. remove from oven and cool.
4. to make the frosting, cream butter and sugar until light and fluffy. add mint extract and mix well. add food colouring. spread/pipe over cooled cupcakes and decorate as desired.
the cupcakes were not particularly sweet, so the frosting complemented them well. the birthday girl loved it, and that was the most important thing. 🙂

I love the colors used here. The green icing compliments the chocolate cake very well. They look amazing, very festive and your friend (I think) looks so cute with them! They look like something she’d like, which is the most important thing!
