cookies ‘n’ cream cupcakes

i know i’m not baking as much as i want to, all because i’m now a slave to the system. however, the four-day weekend was no excuse not to whip something up for a dear friend whom i have known since secondary 1. 🙂


adapted from cupcakes galore; gail wagman

250g self-raising flour
125g butter, softened
200g caster sugar
2 eggs
1 tsp vanilla extract
180ml milk
150g coarsely crushed Oreo cookies

1. preheat oven to 160 degrees celsius.

2. cream butter and sugar until light and fluffy. add eggs, one at a time, mixing well after each addition. add the vanilla extract. alternately add flour mixture and milk and beat until batter is smooth. fold in crushed cookies.

3. spoon batter into cupcake cases, filling about 2/3 full. bake for 20-25 minutes or until a tester inserted into the centre comes out clean. remove from oven and cool.

the cupcakes were well-received, despite us being stuffed from a fish-and-chips dinner and yummy hokkaido ice-cream. i topped the cakes with a cream cheese frosting and the flavours melded really well. i will make these again one day with chocolate buttercream.

  3. hey gal.. this look SO yum.. may i know wad quantities u used fro the cream chesse frosting? so u jus added colouring and piped it out? LOVELY! and if its not too much trouble could u post the recipe for the choc buttercream.. i am in LOVE with ur bakes.. keep the baker’s mind rolling 🙂

    nithya & boo: i don’t have a fixed recipe for the cream cheese frosting – i just add estimated quantities for cream cheese, butter and icing sugar, and a few drops of vanilla essence. it’s really up to your liking; if you like it sourish, use less sugar, and vice versa. nithya, i haven’t made chocolate buttercream before; if i do it and it’s good, i’ll definitely post it. 🙂

  10. hi nur, like i mentioned earlier… i don’t have a fixed recipe for the frosting. i just do it to taste – cream cheese, butter and icing sugar. anyway, glad that they turned out fine for you! 🙂
