i know i’m not baking as much as i want to, all because i’m now a slave to the system. however, the four-day weekend was no excuse not to whip something up for a dear friend whom i have known since secondary 1. 🙂

adapted from cupcakes galore; gail wagman

250g self-raising flour
125g butter, softened
200g caster sugar
2 eggs
1 tsp vanilla extract
180ml milk
150g coarsely crushed Oreo cookies

1. preheat oven to 160 degrees celsius.

2. cream butter and sugar until light and fluffy. add eggs, one at a time, mixing well after each addition. add the vanilla extract. alternately add flour mixture and milk and beat until batter is smooth. fold in crushed cookies.

3. spoon batter into cupcake cases, filling about 2/3 full. bake for 20-25 minutes or until a tester inserted into the centre comes out clean. remove from oven and cool.

the cupcakes were well-received, despite us being stuffed from a fish-and-chips dinner and yummy hokkaido ice-cream. i topped the cakes with a cream cheese frosting and the flavours melded really well. i will make these again one day with chocolate buttercream.

  4. Hiya! I’ve been drooling this week on the colourful frosted cupcakes. I do want to give it a try myself… But I’ve not been able to find an icing/ frosting recipe on your website. Could you kindly tell me how I should do it or where to look?…Thanks!! *DROOLS*

  5. am & patricia: thank you! 🙂

nithya & boo: i don’t have a fixed recipe for the cream cheese frosting – i just add estimated quantities for cream cheese, butter and icing sugar, and a few drops of vanilla essence. it’s really up to your liking; if you like it sourish, use less sugar, and vice versa. nithya, i haven’t made chocolate buttercream before; if i do it and it’s good, i’ll definitely post it. 🙂

  6. anything with oreo cookies is MMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM!

Please, please email me if you can take a small order for Friday!!! 😛 If you still by ANY chance have my number, sms me ok!
