double chocolate peanut butter cupcakes

i asked the birthday boy what cake he’d like, and he said “plain old chocolate” will be good, no “fancy fruity ones.” it’s quite easy to please most of my friends. to give him an extra boost, i decided to factor in peanut butter because he’s a big fan of that too.
from donna hay’s simple essentials: chocolate
125g butter, softened
3/4 cup caster sugar
2 eggs
1 1/4 cups plain flour
1 tsp baking powder
2 tbsp cocoa powder
1/2 cup milk
100g dark chocolate, meltedpreheat the oven to 160 degrees celsius. place the butter and sugar in the bowl of an electric mixer and beat until light and creamy. gradually add eggs and beat well. sift over flour, baking powder and cocoa and beat until combined. fold through the milk and chocolate and spoon the mixture into muffin tins lined with paper patty cases. bake for 20-25 minutes or until cooked when tested with a skewer. cool on wire racks. spread or pipe with desired icing.
the chocolate icing was a mixture of dark chocolate and butter, and the peanut butter frosting was a mixture of peanut butter, milk and icing sugar. these were made based on estimates and to taste, so i can’t give you the proportions.
the final cupcake was very intense and chocolatey; one is more than enough.

oh these are just lovely maya! i really really love the brown & turquoise combination, its so classic! also, may i ask, were the turquoise stars made of choc? they’re not store bought right? coz i always hv prob tempering chocs, and they wont set in room temp 😦

thank you evan! 🙂 yup the turquoise stars are made of chocolate. it’s actually coloured wilton white chocolate melts, i bought them in KL december. i think you might be able to get them in B-I-Y. i don’t temper my chocolate either. :p

Maya, I made your dampest darkest deadliest brownies two days ago and they were devilishly delicious! (jus adding to the alliteration. heh.)
I brought them over to a soccer match in which my cousins were playing and those tired, sweaty boys devoured them all up!! I’ve been invited to come for all their future matches from now on, thanks to yoU! haha.

hi again maya, actually i’ve seen the chocolate melts by wilton in phoon huat (if you’re referring to ones which comes in a variety of colors and in form of round buttons) here :

did you actually melt the choc and pour it in the star shaped mold? i think its unbelievable coz what i meant is, i’ve never been able to do chocs successfully. suppose i melt them, pour them into the mold then refrigerate, after taking them out, they’ll return to their melted state again 😦 so i really admire ppl who can make their chocs stay solid in room temp! wonder what im doing wrong…

evan: actually i just microwave it and put it into moulds and refrigerate! i take a lot of shortcuts because deep down i’m actually lazy. haha. does it depend on the type of chocolate?
