glazed mocha fudge (cup)cake(s)

admittedly i’m not a fan of mocha, but after tasting these, i might just give it a chance. but only when it comes to cakes. i still can’t stomach the drink.

the recipe yielded a 8 inch round cake (for a friend’s mum) and 12 cupcakes. if you make it all in cupcake form, i reckon you’ll get around 24-28.

adapted from the australian women’s weekly: cakes and slices:

cake:

185g butter
2 tsp vanilla essence
1 1/2 cups castor sugar
4 eggs, separated
3/4 cup plain flour
1/3 cup cocoa powder
1 tsp baking powder
3/4 cup plain yoghurt
3 tsp dry instant coffee
1 tbsp hot water

glaze:

60g dark chocolate
30g butter
1 tsp dry instant coffee
1 tbsp water
3/4 cup icing sugar

1. grease a 23 cm square slab plan, line base with paper and grease. (if you’re making cupcakes, arrange cupcake cases in muffin tins.)

2. cream butter, essence and sugar in small bowl with electric mixer until light and fluffy; beat in egg yolks one at a time and beat only till combined. transfer mixture to large bowl, stir in sifted flour and cocoa, and yoghurt, then combined coffee and water.

3. beat egg whites in a small bowl until soft peaks form, lightly fold through cake mixture in two lots. pour mixture into prepared pan/cupcake cases. bake in preheated 170 degrees celsius oven for about 45 minutes. (around 20-25 minutes for cupcakes)

4. turn onto wire rack to cool. top cool cake with glaze, decorate as desired.

glaze: combine all ingredients into a saucepan over low heat. stir constantly without boiling, until smooth.

these cakes won’t rise very much and they are fudgy… yum!
