orange marzipan cupcakes – happy mothers’ day!

happy mothers’ day, i love you!

and a box for the boy’s mum + family.

adapted from tempt: cupcakes to excite

100g self-raising flour
1/2 tsp baking powder
100g butter, at room temperature
100g caster sugar
3 eggs, separated
40g marzipan, chopped finely
1 tsp grated orange rind
2 tbsp fresh orange juice

1. line a 12-hole muffin pan with paper cases.

2. sift flour and baking powder together. cream butter and sugar in a bowl using an electric mixer until light and creamy. beat in the egg yolks, one at a time, until mixture is thick.

3. fold in sifted ingredients, marzipan, orange rind and juice.

4. whisk egg in a separate bowl until just stiff and fold into the flour mixture, one-third at a time.

5. spoon mixture evenly into paper cases and level surfaces with the back of a teaspoon. bake in preheated 160 degrees celsius oven for 18-20 minutes, or until cooked through when tested with a skewer. remove and leave to cool in the pan.

the recipe called for candied orange slices as a topping for the cupcakes, but i didn’t think it was a good idea, since it called for quite a bit of sugar and most probably they won’t be eaten. so i just mixed some orange juice and icing sugar and spooned it over the cooled cupcakes.
