peanut butter milk chocolate chip cookies
May 7, 2007 at 2:38 pm | Posted in Chocolate, Cookies, Peanut Butter | 5 Commentsi baked a batch of these today for my wonderful friend of 10 years, sarina, whose birthday was last week. i didn’t manage to meet up with her because of the crazy exams, so we’re doing dinner tonight. this cutesy box of cookies is one of the gift-installments.
this cookie had a crumbly and crisp texture. i used milk chocolate couverture drops instead of chocolate chips. soooo good with cold milk. 🙂
adapted from the practical encyclopedia of baking; martha day. (makes around 40-50, depending on the size of your cookies)
140g plain flour
1/2 tsp baking soda
115g butter, softened
165g light brown sugar
1 egg
1 tsp vanilla essence
265g crunchy peanut butter
100g milk chocolate couverture drops (chocolate chips or chocolate pieces/chunks are fine too!)1. with an electric mixer, cream the butter and sugar until light and fluffy. add the egg and vanilla, then gradually beat into the mixture.
2. stir in the peanut butter and blend thoroughly. stir in the dry ingredients. add the chocolate chips/chunks. refrigerate for at least 30 minutes, or until firm.
3. preheat the oven to 160 degrees celsius. grease 2 baking sheets.
4. shape dough into balls of preferred size. (i prefer mine to be small; about less than an inch in diamter) place the balls onto the prepared sheets and press flat with a fork . bake until lightly coloured, 12-15 minutes. transfer to a wire rack to cool.
