going bananas

i caught sight of a very lonely banana in the kitchen yesterday, so i decided to make mini banana cupcakes. i’ve been waiting to try this recipe, and it turned out excellent. easily the best banana cake i’ve ever tried. (i hope those who try this agree!) it’s very fluffy and moist. the only thing i’d recommend is increasing the amount of banana – you can never have too much fruit!

next time i’d make it in the larger cases and pipe a dollop of cream cheese frosting. that’ll be the bomb.

  4. kris: haha i shared it. it’s mini by the way, so you’ll have no problem eating many. for me that is. :p at room temp i think it shd be able to keep for 2-3 days. if it’s chilled, it can be kept longer.

  9. how did u manage to keep the cakes stuck to their cups? everytime i make cupcakes, some of their cups will just hang out like loose skin. its really unsightly.

  12. i tried the same recipe and i added 2 more bananas than the original recipe and my cake ended up too starchy, dry and heavy! =((( Maybe u’d like to be careful about extra banana helpings…
