double chocolate pudding

if you need a really quick chocolate fix, this is it. no baking required – just dump everything into a saucepan, stir away and bingo!

this really hits the spot because it contains 2 “kinds” of chocolate – cocoa powder and chocolate. the original recipe called for eating chocolate but i didn’t have that on hand, so i used dark chocolate couverture.

i got the recipe off a blog, but i didn’t include the link when i copied it onto ms word, so i can’t credit the source. my sincerest apologies.

1. in a saucepan, whisk to combine: 3/4 cup sugar, 1/3 cup cocoa powder, 3 tbsp corn starch, 1/4 tsp salt.

2. put the saucepan over medium heat and have ready 2 1/2 cups of milk. gradually whisk in milk and bring the mixture to a boil. remove from the heat and stir into the hot pudding 90 g of grated eating chocolate and 1 1/2 tsp of vanilla.

3. allow to cool slightly before eating, or cool with plastic making contact with the surface of the pudding to prevent a skin from forming. chill overnight for best results!

note: when i make this again, i’d run the pudding through a fine sieve because i realised that there were some lumps of undissolved cocoa powder. other than that, it’s perfect.

    i told you this before,.. if only we were neighbours. id be more than happy to test everything that comes out from ur oven/fridge/andwhathaveyous. heh.
