chocolate cheesecake brownie

they are a breeze to whip up. the tang of the cheese complemented the brownie base well. the brownie bit wasn’t fudgy or chewy, and i think it lacked a “chocolate depth” presumably because it only called for cocoa powder. nonetheless, they are great for something so quick and easy to make! the boy and his CCA friends liked it, so i guess it’s good. or is it because (most) boys are not-that-fussy when it comes to food? π
from donna hay’s modern classics 2:
185g butter, melted
1/4 cup cocoa powder, sifted
1 cup caster sugar
2 eggs
1 cup plain flourcheesecake
285g cream cheese, softened and chopped
4 1/2 tbsp caster sugar
2 eggs
1. preheat oven to 160 degrees celsius. place the butter, cocoa, sugar, eggs and flour in a bowl and mix well until smooth. spoon into an 8-inch square slice tin lined with non-stick baking paper.
2. to make the cheesecake, process the cream cheese, sugar and eggs in a food processor until smooth. (i used handheld electric beaters) place large spoonfuls of the cheesecake mixture on top of te chocolate mixture and swirl with a butter knife. bake for 30-40 minutes or until set. cool in the tin. cut into slices. (i usually refrigerate the tin and cut when it’s cold, you’ll get cleaner slices that way)

oh. my. gosh. combining chocolate AND cheese. a brownie AND cheesecake. hahaha i think i’ve died and gone to heaven… but hopefully not coz i wanna go home and try this out!!! (and btw, the hostel thing.. yeah lah like i said, i’ll update openly after it’s over haha.. but u can ask fr sarina lah if u see/talk 2 her =))

guess who tried these out last weekend? =) had a tub of cream cheese in the fridge, and i had cravings for chocolate too haha.. anyway, my mum’s frens LOVED it leh. haha they polished it off when i went to school! which means that i only had like a few tiny slices -_- anyway, just wanted to say thx 4 always giving us recipes haha.. really love looking at ur pics when im *ahem* supposed to be studying too hahaha…
