cocoa sandwich cookies
November 19, 2006 at 12:03 pm | Posted in Chocolate, Cookies | 17 Commentsi made these for the boy in view of our 70th month. i don’t usually do “monthly” things, but i thought it was timely to make something just for him. š these were adapted from a vanilla cookie recipe and i sandwiched them with chocolate ganache.
recipe is as follows:
225g flour (i substituted 2 tbsps of flour with 2 tbsps of cocoa)
150g butter, diced
125g caster sugar
1 tsp vanilla essence
1. lightly grease a baking tray.
2. put the flour and cocoa in a large bowl and rub in butter with your fingers until the mixture resembles fine breadcrumbs.
3. stir in caster sugar and vanilla extract and bring the mixture with your hands to form a firm dough. (refrigerate for 1-2 hours if your dough is soft)
4. on a lightly floured surface or between sheets of parchment paper, roll out dough to a thickness of around 2 cm. stamp out shapes with cookie cutter. (or you could just roll it into balls and flatten with a fork)
5. arrange the dough shapes onto the baking tray and bake in preheated 160 degrees celsius oven for 15-20 minutes.
6. transfer cookies to a wire rack and leave to cool.
spread chocolate ganache on one cookie and sandwich it with another.

evan: no it isn’t. i tried that recipe (fortunately i halved it) and it didn’t turn out too good for me. the cookies were rather cakey. i didn’t know what went wrong.

really? sometimes the cookies i do taste cakey too. maybe didnt bake it long enough? i will then bake it a 2nd time and they turn out ok, crispy n everything. funny huh. anyway your cookies look very nice, esp with the heart. u got the sprinkles from tanjong katong? i tot u bought from BIY. what kind of shop is the katong one?
