luscious midnight chocolate tartlets

last saturday i baked these chocolate tartlets for the gathering i had with my secondary school gang. the recipe is from crave: cheese desserts to die for.

i was skeptical of the result because i rushed through the baking process (i was making cookies before that) but they lapped it up fast, so i was relieved. the filling is a bittersweet chocolate-cream cheese; topped with chocolate ganache. i still have a long way to go in making nice, crisp tarts though!

recipe as follows:

dough:
100g plain flour
1 tbsp cocoa powder
1/4 tsp salt
55g butter, softened but still cool
60g icing sugar
1/2 egg

1. sift together flour, cocoa powder and salt. set aside.
2. with an electric mixer, cream butter at low speed until smooth. add icing sugar and mix until well incorporated.
3. add egg and mix until smooth. add flour mixture and continue mixing at low speed until dough just comes together. gather dough into a ball and cover with plastic wrap. refrigerate for at least 4 hours.
4. remove dough from refrigerator. let soften slightly at room temperature for 10-15 minutes.
5. on a floured surface, roll dough to around 0.5 cm thickness and use a large round cookie cutter to cut rounds. transfer dough rounds to tartlet moulds, lining the bottom and sides evenly. prick all over with fork and refrigerate while making filling.
filling:
1 1/4 tbsp butter
1 2/3 tbsp warm water
70g dark chocolate, finely chopped
75g cream cheese
2 1/2 tbsp castor sugar
1 egg, lightly beaten

chocolate ganache:
50 dark chocolate, finely chopped
50ml whipping cream

method:
1. preheat oven to 160 degrees celsius.
2. prepare filling. in a small saucepan over medium heat, melt butter in warm water. remove from heat and immediately stir in chopped chocolate until completely melted and smooth.
3. in a medium bowl, beat cream cheese and sugar until creamy. gradually add egg and chocolate mixture, mixing until smooth.
4. pour filling into chilled shells until 3/4 full. bake for 25-30 minutes, or until filling is risen and almost firm to the touch. remove from oven and leave to cool on wire racks.
5. prepare ganache. place chopped chocolate in a small bowl. bring cream to the boil. pour over chopped chocolate and stir gently until smooth. spoon ganache on top of cooled tartlets.

    they have lovely decorative stuff there.
    ahh…its beside autobahn! where they rent out expensive luxurious cars.
