so far, donna hay hasn’t disappointed. these are spongy shells with a sufficiently moist crumb. i also like the fact that most of her recipes do not require many ingredients.

admittedly i’m not a fan of mocha, but after tasting these, i might just give it a chance. but only when it comes to cakes. i still can’t stomach the drink.
the recipe yielded a 8 inch round cake (for a friend’s mum) and 12 cupcakes. if you make it all in cupcake form, i reckon you’ll get around 24-28.

tonight we are having a birthday dinner for the may babies in my family – the brother, sister and uncle, so i decided to make a black forest cake – the uncle’s favourite.

we are going for a fun-filled frolic in the park tonight, so i thought it’d be a good idea to bring some food. i made a substantial and very chunky mushroom soup, to be swiped with bite-sized foccacia pieces (bought, not baked!) and for dessert, we’re going to have these.

i caught sight of a very lonely banana in the kitchen yesterday, so i decided to make mini banana cupcakes. i’ve been waiting to try this recipe, and it turned out excellent. easily the best banana cake i’ve ever tried. (i hope those who try this agree!) it’s very fluffy and moist. the only thing i’d recommend is increasing the amount of banana – you can never have too much fruit!

next time i’d make it in the larger cases and pipe a dollop of cream cheese frosting. that’ll be the bomb.
